Beef Stew

=Ingredients

  • 2lb chuck roast, cut into 1 inch chunks
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced onion
  • 3 bay leaves
  • 2 Tbsp Ancestral Seasonings
  • 3 Tbsp flour
  • 1 qt Beef Stock
  • 2 Tbsp light soy sauce
  • 1/2 cup apple juice (or other flavor liquid for deglazing)
  • 2 Tbsp cooking oil

Directions

  1. Heat oil in large pot until just smoking
  2. Season beef
  3. Coat beef with flour
  4. Brown beef in batches, set aside
  5. Deglaze pot with apple juice and scrape up stuck bits, pour with beef
  6. Pour more oil in pot
  7. Saute onion, carrot, celery and bay leaves until soft (about 5 min)
  8. Add beef, stock and soy sauce. Stir to mix
  9. Bring to boil, reduce to simmer for 1.5 hrs
  10. Season to taste
