Beef Stew
From Auntie's Cook Book
=Ingredients
- 2lb chuck roast, cut into 1 inch chunks
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced onion
- 3 bay leaves
- 2 Tbsp Ancestral Seasonings
- 3 Tbsp flour
- 1 qt Beef Stock
- 2 Tbsp light soy sauce
- 1/2 cup apple juice (or other flavor liquid for deglazing)
- 2 Tbsp cooking oil
Directions
- Heat oil in large pot until just smoking
- Season beef
- Coat beef with flour
- Brown beef in batches, set aside
- Deglaze pot with apple juice and scrape up stuck bits, pour with beef
- Pour more oil in pot
- Saute onion, carrot, celery and bay leaves until soft (about 5 min)
- Add beef, stock and soy sauce. Stir to mix
- Bring to boil, reduce to simmer for 1.5 hrs
- Season to taste
