Ingredients

  • 1.5 lbs fingerling potatoes
  • 2-3 cups of kosher salt
  • 1/2 cup duck fat or olive oil
  • 2 Tbsp parsley, minced
  • 1 Tbsp mint, minced
  • 1 Tbsp tarragon, minced
  • 1 lemon, zested

Directions

  1. Heat oven to 375F
  2. Rinse potatoes to remove dirt, shake off excess water
  3. Place damp potatoes in a baking dish, flat in a single layer. Cover completely with salt
  4. Bake for 25-30 minutes
  5. Allow potatoes to cool before brushing off excess salt and smashing
  6. Brush smashed potatoes with duck fat or oil and lay out on a sheet tray lined with parchment paper in an even, flat layer
  7. Roast potatoes until golden & beginning to crisp, 15-20 minutes
  8. Remove potatoes from oven & toss with chopped herbs, lemon zest and salt to taste
