Ingredients

  • 1 medium white onion, medium diced
  • 1 medium green bell pepper, deseeded and medium diced
  • 1 scotch bonnet pepper, deseeded and chopped (optional)
  • 2 garlic cloves, minced
  • 1 tablespoon extra-virgin olive oil
  • 2 sprigs fresh thyme, de-stemmed
  • 1 can corned beef
  • 1 medium ripe tomato, chopped
  • 2 scallions, thinly sliced
  • 1 teaspoon browning (optional)

Directions

  1. In a skillet over medium heat, add onion, bell pepper, and scotch bonnet pepper. Sauté for 2 minutes
  2. Add garlic and olive oil. Sauté until fragrant, about 1 to 2 minutes.
  3. Add thyme and corned beef (mash to separate). Turn down heat to medium-low and stir until heated through about 5 minutes.
  4. Add tomato, scallions, and browning. Stir well and cook for another 2 to 3 minutes, or until well combined.
