Ingredients
- 1 lb boneless chicken thighs (cut into strips)
- 1 lb Minced steak (See notes)
- 1 lb Chorizo ground meat
- 1 pack of bacon (chopped)
- 2 large onions (sliced)
- 4 Poblano peppers (sliced)
- 10 Roma tomatoes (chunked)
- 5 cloves of garlic (sliced)
For toppings
- Tortillas
- Sour Cream
- Shredded Cheese
- Salsa or Pico de Gallo
Directions
- Season chicken and steak (for a few hours if possible, overnight even better)
- Cook bacon in the discada until crispy, push to side (leave grease in the pan)
- Brown chorizo until done, push to side (yes, leave all the grease)
- Cook chicken thighs until mostly done, push to side
- Cook steak, push to side
- Add onion, garlic, and poblanos. Cook until soft
- Add tomato and all the meats, mix well
- Lay tortillas on top of meat, the latent heat will warm the tortillas perfectly
Notes
- Use pre-minced carne picada or get a chuck roast and mince yourself
