Chili Recipe - 3.5 of 5 heat level
Ingredients
- 1 lb ground beef 85% - 90% lean
- 1 lb steak (chuck or round) cut into 1/2 in pieces
- 1 lb sausage
- 1 medium onion (diced)
- 1 large green pepper(diced)
- 5 cloves garlic (minced)
- 2x28oz cans of crushed tomatoes
- 2x15oz cans of unsalted diced tomatoes
- 1 tbls cumin
- 3 (ONLY 3 individual) canned chipotles in adobo diced + all adobo sauce
- 2 tbls kosher salt
- 2 tbls of veg oil
- 1 cup of water

Directions
- Heat oil in pot and brown the steak, set aside
- Brown ground beef then set aside leaving juices in pot
- Brown the sausage, set aside leaving 3 tbls of fat
- On medium-high heat, saute onion/pepper/garlic until just soft
- Add all the meat and season with salt and cumin, then mix. Cook 2 min
- Add chipotles and adobo sauce, mix
- Add water, crushed and diced tomatos, mix well
- Bring to rapid bubbling the turn heat to low and simmer for 2 hours uncovered
This tastes WAAAAYYYYY better if allowed to sit overnight
