Ingredients

  • 1 30 oz can of black beans, drained and rinsed
  • 1 onion diced
  • 3 cloves of garlic diced
  • 1 green pepper diced
  • 1 12-16 oz smoked sausage sliced
  • 1/4 cup sweet vermouth (or other sweet-ish wine)
  • 1.5 cups of water
  • 2 tbls (1 cube if frozen) sofrito
  • 2 tbls EVOO
  • 1 tbls oregano
  • Salt & Pepper to tast

Directions

  1. Heat EVOO in pot, brown sausage
  2. Remove sausage from pot, keep warm
  3. Saute green pepper, onion, garlic, sofrito until fragrant. Add vermouth, scrape up browned bits in pot
  4. Return sausage and remaining ingredients. Mix well.
  5. Bring to boil, reduce to simmer for 30 min
